Without a doubt, each October I fall in love with all things pumpkin and pumpkin spice related. But this year, the pumpkins have rolled out early! Between the pumpkin picking, pumpkins lining the front porches, pumpkin pies, and the pumpkin spiced EVERYTHING, I can’t get enough! There are so many great pumpkin recipes available on the internet because it is just that good. I have found everything from pumpkin milkshakes to pumpkin muffins to chili. Each year, during Lent, I struggle to find recipes to satisfy my family on our meatless days. This year is even more challenging while trying to maintain a Paleo lifestyle since white carbohydrates (bread, rice, pasta, white potatoes, etc.) and dairy (cheeses, milk, etc.) are out of the question as substitutes for meat.
