I know it has been a long time since I last blogged. Life has been hectic lately (like everyones) but I wanted to share my new favorite recipe with you. This was inspired by traditional casserole recipes from my youth. This recipe is quick and easy and can be thrown together quickly. I hope you and your family enjoy my latest invention.
Ingredients
3 cooked chicken breasts, cubed
5 cups frozen broccoli, steamed
1 can Cream of Mushroom soup
12 baby carrots
1 medium celery stalk, chopped
1/4 cup onion, chopped
1/2 cup shredded cheddar cheese
1 TBSP Old Bay Seasoning
Directions
1. Preheat oven to 350 degrees
2. Grill or broil chicken breasts until they are cooked. Cube and set aside
3. Steam/ cook broccoli according to packaging (fresh, cooked broccoli may be substituted)
4. Mix remaining ingredients and cubed chicken together in a medium sized bowl.
5. Place cooked broccoli at the bottom of a casserole dish
6. Place chicken mixture on top of broccoli
7. Bake for 45-50 minutes
Optional:
Serve over rice or pasta
